Grain-Free Vegan Gingerbread Cookies

Today’s new cookie recipe was created with the intention to provide a more universal cookie for my own allergy-sensitive family and friends. These Grain-Free Vegan Gingerbread Cookies are slightly sweet with a nice spice. They are made without the use of oil, butter, eggs or soy and use minimal ingredients. Such a win for a busy family. Feel free to decorate as you like or dip and dunk in your favorite tea or beverage.

Over the years I’ve learned to temper my enthusiasm and personal tastes with a little individual personalization for those I love. Navigating dietary restrictions can be challenging but, with a little extra care, your recipient will be safe and happy.

Grain-Free Vegan Gingerbread Cookies

Follow these few simple rules when sharing homemade treats:

  • Before beginning your recipe, write down a list of potential harmful ingredients, those things that might make your recipient ill. These may include: nuts, dairy, eggs, chocolate and certain types of grain products.
  • My kitchen is a gluten-free space but I do use multiple different types of grain and flour to create my baked goods. Some folks are can be sensitive to gluten-free grain and may need modifications to the recipe.
  • Start each baking session with a clean surface and clean equipment. This is imperative to prevent any cross contamination.
  • Double check your ingredient list with the list of your recipient’s allergies.
  • Create a small tag with a list of all ingredients used in your recipe. This allows the recipient to feel good about what they are eating.

Molasses in Baking

Molasses is a byproduct of sugar manufacturing and often used in gingerbread recipes.  This dark, sticky sweetener contains essential minerals and trace amounts of vitamins, including copper, iron and magnesium.

Gingerbread Ice Cream Sandwich Cookies! YUM!

After rolling our your dough, cut into even-sized circle shapes. Bake and cool. Fill with your favorite vegan ice cream. Roll in candy canes, nuts, seeds or whatever strikes your fancy.

Grain Free Vegan Gingerbread Cookies

These Grain-Free Vegan Gingerbread Cookies are slightly sweet with a nice spice. They're not only vegan and grain-free, but also oil-free, soy-free with minimal ingredients. Feel free to decorate or dip and dunk in your favorite tea or beverage.

Ingredients

  • 1 cup blanched almond flour 114 g
  • 3 tablespoons arrowroot flour
  • 1/3 cup plus 1 tablespoon coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 cup creamy, roasted almond butter It is important to use creamy almond butter as this is what I used in this recipe for moisture.
  • 2 1/2 tablespoons organic molasses
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla
  • 1 tablespoon orange juice

Instructions

  1. Place shapes on parchment lined cookie sheet and bake 8-10 minutes. Remove and allow to cool completely. Decorate as desired.
  2. In a medium mixing bowl, add dry ingredients and whisk until well mixed. (almond flour, arrowroot flour, coconut sugar, baking soda, sea salt and spices)
  3. In a small mixing bowl, combine almond butter, molasses, maple syrup, orange juice and vanilla. Stir until well combined.
  4. Create a well in the middle of your dry ingredient bowl and add wet mixture. Begin to combine wet and dry using a large spoon or clean hands.
  5. Continue needing the dough until a large ball forms.
  6. Roll dough out between two pieces of parchment paper. Pro Tip: Using a Silpat helps prevent the parchment paper from slipping.
  7. Roll dough out to 1/4" thick and cut into desired shapes. Alternatively, roll dough into tablespoon size balls and flatten with your hand.
  8. I enjoy a little chocolate drizzle on my gingerbread cookies. I made this using 1/2 cup of Enjoy Life chocolate chips warmed with 1 tablespoon lite coconut milk. After melted, I added the mixture to a piping bag and decorated my trees.
