How to make Vegan Gluten-free Linzer Cookies
Two bowls, a big spoon, a round cookie cutter and small heart cookie cutter is all you will need to create these adorable cookies. Shopping list is as follows:
- almond flour
- rice flour
- oat flour
- cashew butter
- fresh orange juice
- cane sugar
- unsweetened applesauce
- almond and vanilla extracts
- sea salt
- 1 package fresh or frozen raspberries
- pure maple syrup
- 2 tablespoons chia seeds

Homemade Raspberry Jam
These cookies can always be filled with store-bought jam; however, making your own is quick and easy as well.
How to make Homemade Raspberry Chia Jam
Simply add frozen raspberries and a small squeeze of lemon juice to a saucepan. Bring berries to a boil over medium heat, reduce heat and add in maple syrup, one small pinch sea salt (optional) and chia seeds. Give a good stir and allow to simmer for 1-2 minutes. Remove from heat and allow to cool down before adding to a clean jar. Refrigerate. Note: The water in frozen berries is typically enough liquid; however, if using fresh raspberries, you may want to add a tablespoon of water to the mix.

These Vegan Gluten-free Linzer Cookies are the perfect way to treat-yourself this Valentine's Day. Made with just a few ingredients and without any oil, these cookies make a sweet little bite for all the guys, gals, or kids in your life.
Ingredients
- 1/2 cup blanched almond flour
- 3/4 cup brown rice flour
- 1/4 cup oat flour simply grind rolled oats into flour using a food processor, high-speed blender or spice grinder
- 1/8 teaspoon fine sea salt
- 1/2 cup raw cashew butter
- 2 tablespoons fresh squeezed orange juice
- 1/2 cup organic cane sugar
- 2 tablespoons unsweetened applesauce
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
Instructions
- Gently lay each cookie on the lined baking sheet and bake 10-11 minutes. Watch closely. After removing from the oven, allow the cookies to cool completely before assembling with the jam.
- Using a small mixing bowl, cream together cashew butter, orange juice, cane sugar, applesauce, vanilla extract and almond extract.
- Using a medium size mixing bowl, combine flour and sea salt.
- Add creamed cashew butter mixture to dry flour mixture. Stir until well combined. The dough will be thick. Form into a ball, cover with parchment paper or plastic wrap and refrigerate for 30 minutes.
- Remove dough ball from refrigerator and place between two pieces of parchment paper. Using a rolling pin, roll out to desired thickness. I typically roll mine out to about 1/4" thick.
- Use a round cookie cutter (this is only if you do not own a Linzer cookie cutter) to cut out cookie tops and bottoms. Remember, you will need two rounds per cookie. Use a very small heart shaped cookie cutter to cut out the center of each cookie top.
- Place dollop of jam (store-bought or homemade) in the middle of each cookie base. Place the top cookie with the heart cut out on top. Sprinkle with powdered sugar if desired.
