Gluten Free Banana Bread

Ripe bananas are always useful in a vegan kitchen, especially as a creamy addition to any smoothie.  However, today we’ve got the oven fired up with a loaf of Gluten Free Banana Bread sitting on the middle rack. This lovely loaf is made without the use of eggs and is currently filling the air with the sweet smell of bananas and vanilla. As the tea pot whistles, ready for a pot of afternoon tea, we can’t wait for a bite of warm bread, drizzled with Enjoy Life melted chocolate chips.

How to get a light loaf without gluten or eggs…

In the past, we always used ground golden flaxseeds as a binder in our baked goods. We found the golden flax to have a mild flavor and useful as an egg substitute when freshly ground. However, we recently shifted from our love of golden flax to aquafaba (the liquid from a can of chickpeas). Aquafaba is a starchy liquid that makes for an amazing egg substitute. We typically use three tablespoons of aquafaba to replace one egg in our baking.

Don’t be afraid to try something new! Yes, we have had some real failures in the kitchen, but never let that stop us from challenging ourselves with something new. You never know where that journey will take you.

Gluten Free Banana Bread

Ingredients
  1. 3 ripe bananas (medium-size is best)
  2. 1/3 cup warmed coconut oil
  3. 3 tablespoons aquafaba (the liquid from a can of chickpeas)
  4. 1/3 cup coconut sugar
  5. 2 tabelspoons pure maple syrup
  6. 1 teaspoon vanilla extract
  7. 1 1/2 cups gluten-free flour mix
  8. 1 teaspoon baking soda
  9. 1 teaspoon ground cinnamon
  10. 1/4 teaspoon fine sea salt
Instructions
  1. Preheat oven to 375°F.
  2. Grease a 4x8-inch loaf pan.
  3. In a mixing bowl, use a fork to completely mash the ripe bananas.
  4. Add warmed coconut oil, aquafaba, coconut sugar, maple syrup and vanilla.
  5. Stir until well combined.
  6. Using a small mixing bowl, whisk together flour, baking soda, cinnamon and sea salt.
  7. Add flour mixture to wet ingredients and stir until combined.
  8. Pour the batter into prepared pan.
  9. Bake for 45-55 minutes, or until toothpick inserted into the center comes out clean.
  10. Remove from the oven, and let bread cool completely before slicing.
  11. ENJOY!
