Chia Pudding Parfait

Kickstart your new year with our layered Chia Pudding Parfait.  We’ve paired an easy-to-make, overnight chia pudding with our creamy Coconut Lucuma Smoothie (with an added a boost of baobab and vanilla). Kick-it-up a notch with any superfood or flavor combination of your choice.  Make it as fancy as you like…experiment and have fun!

Lucuma fruit, native to Peru, is slightly sweet and provides 14 essential trace minerals including potassium, sodium, calcium, magnesium and phosphorus.

Chia Pudding Parfait

Chai Pudding
  1. 1.5 cups almond milk
  2. 1 cup fresh or frozen organic raspberries
  3. 1/3 cup chia seeds
  4. 1-2 tablespoons maple syrup
  5. Optional: use 1-2 pitted dates, coconut nectar or honey (not vegan) as your sweetener instead of maple syrup.
  6. 1 teaspoon vanilla
Smoothie
  1. Meat of one young Thai coconut
  2. 1/2 cup almond milk
  3. 2-3 frozen bananas
  4. splash of almond milk
  5. 1/2 teaspoon vanilla
  6. 1 tablespoon lucuma
  7. 2 teaspoons baobab
  8. Sweeten if needed, although I found the bananas to be plenty sweet in my smoothie!
Chia Pudding
  1. Add almond milk, frozen raspberries, maple syrup and vanilla to your blender. Blend until smooth.
  2. Add chia seeds and give a quick pulse to mix in seeds.
  3. Place chia pudding mixture in a large jar and refrigerate overnight.
Smoothie
  1. Using a high-speed blender, add the meat of one Thai coconut and a splash of almond milk. Blend until creamy, remembering to scrape down the sides of the blender to get every bit of the delicious coconut blended. The mixture should be thick but creamy. If needed, add a little extra almond milk.
  2. Add frozen bananas, vanilla, lucuma and baobab to your coconut mixture. Blend until creamy.
  3. Layer chia pudding and smoothie in a tall parfait glass. Top with fresh fruit or nuts and serve.
  4. ENJOY!
