I’m always rethinking nutrition when it comes to my little plant-based athlete, Faith. She’s constantly on-the-go, playing volleyball most of the time with nutritional needs that are a little more intense than my own. Like many parents, I’m concerned about providing the right combination of plant-based proteins for her growing needs. The challenge is how to get these proteins into a recipe that’s easy to pack and travels well. I had been making different creations (on and off) over the past several months, some amazing, while others…not so much! Much to my surprise, I found a special treat at the Volleyball Festival in Phoenix this past June. I came across a cool little restaurant called Kaleidoscope Juice, offering fresh juices, smoothies, salads and a package of freshly made peanut butter and Warrior Protein cookies. They were amazing! Not too sweet with an added punch of Warrior Protein. I’ve tried to recreating these little gems a few times with little success…until today. Check out my newly created Peanut Butter Power Bars.
I’ve increased the nutrition in my power bars by adding chia seeds in addition to the Sun Warrior – Warrior Blend Raw Protein Powder. Note: I used the “Natural” flavored powder, as I’m not a fan of added flavors or sweeteners when using protein powders.
Warrior Blend Ingredients:
Proprietary Protein Blend (Raw Organic Pea Protein, Raw Cranberry Protein, Raw Organic Hemp Seed Protein), Medium Chain Triglycerides from Coconut
- Complete protein contains all essential amino acids*
- Creates a feeling of satiety (fullness)*
- Promotes muscle function*
- Idea for healthy weight loss*
- Easy to Digest*
- Increases energy*
Our bars can be made and eaten raw, however, I ended up baking mine and adding one Enjoy Life Foods Mega Chunk on top of each bar. It’s always fun adding a little surprise on top for the kids.
- 1 cup gluten free rolled oats
- 1/2 cup organic peanut butter
- 1 scoop Sunwarrior protein - natural flavor
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons coconut palm sugar
- 2 tablespoon coconut nectar
- 2 tablespoon coconut oil
- 1 tablespoon chia seeds
- 1 teaspoon vanilla
- 1/4 teaspoon Ceylon cinnamon
- pinch of high-quality sea salt
- Preheat oven to 350 degrees.
- Process oats in a food processor until you get a fine texture.
- Add all other ingredients, and continue to pulse until a ball of dough forms.
- Press the dough into a small pan (I used a loaf pan) - press down with a spatula.
- Score your dough with a knife, making bar shapes.
- Add 1 Enjoy Life Mega Chunk on top of each bar.
- Bake 18 minutes.
- Remove from oven and cool completely.
- Place in covered container and store in refrigerator.
- ENJOY!

My kids LOVED these. I used the vanilla Sunwarrior protein and they turned out great. Also found Sunwarrior packets sold individually at vitamin shoppe and so I didn’t have to purchase an entire container for the recipe!
