I’m often inspired by a simple trip to the grocery store or local Farmer’s market. Today’s Summer Plumcot Salad was inspired while walking through Trader Joe’s. Who knew such a pretty salad would come out of that trip. I found some beautiful organic figs and plumcots. Lovely! Adding these sweet, little finds to my Organic Girl Arugula mix made the perfect salad for a nice summer day.
According to Family Tree Farms:
“Plumcots are a hybrid fruit, the result of carefully controlled cross-pollination between plums and apricots. Different varieties of plums, crossed with different varieties of apricots have yielded a wide array of plumcot varieties, with more arriving every year.”
The key to any good salad is simplicity. We’ve used four simple and fresh ingredients in the base of our salad and made a quick Plumcot blender dressing to top it off. Ready in about 5 minutes.
