Oh the lovely simplicity of roasted beets! No need for too many added flavors, as these golden beauties stand out on their own. Today we’re sharing a simple recipe for our Roasted Golden Beet Dip. This dip is both sweet and satisfying…a great way to get beets into your diet and reduce sugar cravings at the same time.
Beets are naturally sweet, especially when roasted! I’ve been known to snack on slowly roasted (sweet) vegetables as a means of cleaning up my act and reducing my sugar cravings.

Roasted Golden Beet Dip

Ingredients
- 3 large golden beets
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
- 1-2 cloves roasted garlic
- 1 heaping tablespoon cashew butter
- 1/2 teaspoon fresh chopped rosemary
- 1 teaspoon fresh thyme
Instructions
- Preheat oven to 400 degrees.
- Cut tops off and wash beets well. (Using a vegetable brush helps remove any debris)
- Place beets on a baking sheet lined with parchment paper or aluminum foil.
- Drizzle with olive oil and a pinch of sea salt. (I typically roast a head of garlic at the same time)
- Cook for about 45 minutes or until beets are fork tender.
- Remove beets (and garlic) from oven and let cool (sweat) in a bowl covered with a kitchen towel. This makes removing the skin easier.
- When cool to the touch, remove the skins and place beets in a food processor.
- Add 1-2 cloves roasted garlic (could use 1 clove raw garlic), cashew butter, herbs and a pinch of sea salt.
- Give a whirl, remembering to scrape down the sides as needed.
- ENJOY!
