We’re on a path to wellness and have collectively dealt with some fairly serious health issues. We understand and empathize with those of you trying to maneuver through the world of food, especially when your health depends on it.
A small peek into our own collective health issues…
Alpha1 Antitrypsin Deficiency:
Alpha–1 antitrypsin deficiency (AAT deficiency) is an inherited condition that raises your risk for lung and liver disease. Alpha–1 antitrypsin (AAT) is a protein that protects the lungs.
Alpha-1 occurs when there is a lack of a protein in the blood called alpha-1 Antitrypsin, or AAT. AAT, the alpha-1 protein, is mainly produced by the liver. The main function of AAT is to protect the lungs from inflammation caused by infection and inhaled irritants such as tobacco smoke.
The low level of AAT in the blood occurs because the AAT is abnormal and cannot be released from the liver at the normal rate. This leads to a build-up of abnormal AAT in the liver that can cause liver disease and a decrease of AAT in the blood that can lead to lung disease.

- This latest development, discovered in July of 2019, has rocked our world. Uncovered by a doctor who was looking into some unusual blood work for my daughter.
- Although this diagnosis has brought our family to our knees, we are attempting to learn all that we can about the progression of alpha-1 antitrypsin deficiency in an attempt to offset some of the progressive damage with our own food and supplement plan.
- If you know of anyone with early-onset COPD, please feel free to contact me. COPD is one of the major symptoms of this genetic disorder.
Autoimmune issues: Allergies, Sjogren’s Syndrome, Epstein Barr Virus, Celiac Disease
Serious traumatic events: Bone tumor, Perforated esophagus and eventual esohpagectomy (read more on “About” page), and Fractured back
Ongoing: High BP , ventricular tachycardia, Afib, weight issues
Bi-products of ill health: acne, anxiety and depression
What we do…
- Check out eateries that provide both plant-based and gluten-free options.
- Chat with the chefs, cooks and staff along the way about their own personal mission to provide clean-eating options.
- Seek products to enhance health without all of the hype.
- Share our honest experiences with you on the blog and through our social media sites.
- Continually search for enthusiastic people living a gluten-free, plant-based, minimally processed, organic, and non-GMO way of life.
Our goal is to share our family and experiences while shedding a little light on the path to healing along the way. It’s all about the love and laughter along the way!
