I have personally felt a strong tug toward new ideas and have begun shaping what those new ideas might look like. We’ll see where this new year energy takes me! The jewel of the season…CITRUS!
Today’s recipe was created using oranges from my own backyard. Although, not quite as sweet as last year, this crop is still extremely juicy and delicious! I truly believe nature adjusts as we move from season-to-season and year-to-year, giving us exactly what our bodies need at any given moment. Staying in tune with that basic idea provides a foundation for healthy eating year-round. My Gluten-Free Vegan Spiced Orange Loaf utilizes the juice and zest of homegrown oranges, picked directly from my backyard tree just before baking. The base flour mix is made with a mixture of gluten-free flours that I had on hand. Feel free to mix-it-up and use what you have as well. ENJOY!
Benefits of Oranges
Oranges are one of nature’s offerings that are perfectly suited for the winter months. They contain bioflavonoids which help neutralize free radicals and, when combined with vitamin C, work to increase immune health. During cold and flu season, that becomes a big bonus! Thank you Nature!
Gluten-Free Vegan Spiced Orange Loaf

My Gluten-Free Vegan Spiced Orange Loaf utilizes the juice and zest of homegrown oranges, picked directly from my backyard tree just before baking.
Ingredients
- 3/4 cup blanched almond flour
- 3/4 cup fine oat flour I buzz gluten-free, old-fashioned oats in my spice grinder to create a fine flour.
- 3/4 cup brown rice flour I like Bob's Red Mill, Organic Brown Rice Flour
- 1/4 cup arrowroot flour/starch
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 Tablespoons ground psyllium husk I use Organic India Psyllium and grind in my spice grinder to create a fine powder.
- 1 cup coconut palm sugar I typically adjust according to the sweetness of my oranges. Somewhere between 3/4 cup to 1 cup is typically nice.
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- Orange zest from 2 oranges This can be adjusted according to your own preference. I like a little more bite, therefore add the zest of two oranges. Note: My oranges are on the small to medium size.
- 1/2 cup orange juice
- 1 cup applesauce I use Trader Joe's organic applesauce in the glass jar.
- 3 Tablespoons unrefined coconut oil Measure before melting
- 2 teaspoons pure vanilla extract
Instructions
- Preheat your oven to 375◦F.
- Line a loaf pan with parchment paper or lightly oil with coconut oil.
- Using a medium-size bowl, combine all dry ingredients: Almond four, oat flour, brown rice flour, arrowroot flour, sea salt, baking soda, baking powder, ground psyllium husk, coconut palm sugar, cinnamon, ginger and nutmeg. Whisk until well combined.
- Place 3 tablespoons of coconut oil into a small saucepan. Add applesauce, orange juice and vanilla. Warm over low heat until coconut oil has melted. Remove from heat, add zest from 1 to 2 oranges. Stir to combine.
- Pour warmed mixture into the middle of the dry mixture. Stir until batter comes together and ingredients are well mixed.
- Pour batter into prepared loaf pan. Bake 50-55 minutes, or until toothpick inserted comes out clean.
- As with all gluten-free baking, it is EXTREMELY important to allow the loaf to cool before slicing. These types of loaves will continue to set up as they cool.
