Life’s own idea of time came to play for the Kelly family over the past couple of months causing a pause in my normal routine. Sadly, we said our last goodbye’s to Bill’s dad in late August. His passing has left an everlasting hole in the Kelly Clan and is another reminder of just how short life can be. Even at 92, it didn’t seem long enough. For now, we hold onto the memories, floating in and out, entering as they wish without notice. We find ourselves in this midlife space ready to face what is to come and so thankful for what has been. My husband was incredibly blessed to have such a loving father to call his own.
As we move into the week, I’ve decided to ease my way back into the kitchen with an incredibly simple recipe for fall. Vegan Vegetable Ragu is a wonderful way to use up those miscellaneous veggies that didn’t quite make it into the weekly meal plan.
Our Vegan Vegetable Ragu is made with 100% organic veggies, including, Cremini mushrooms, celery, carrots, canned tomatoes, plenty of garlic and fresh garden herbs. Sautéed in a little organic extra-virgin olive oil and dinner is ready. Serve over warm rice, potatoes or cauliflower millet mash found here.
