Teff is still on our agenda with a uniquely crafted recipe for Gluten Free Teff Waffles. As mentioned in my previous post, teff is a gluten-free, pseudo-grain that just happens to be one of the most nutritious alternatives to traditional grain products in the world.
Given our family history of Sjogren’s Syndrome and now Celiac Disease, it’s vitally important that we maintain a gluten-free diet without letting our circumstances control us. We still love the same foods we enjoyed years ago but have adjusted accordingly.
Breakfast now consists of highly nutritious smoothies, homemade gluten-free waffles or pancakes, fresh fruit and cooked gluten-free grain. We no longer reach into a bag of bread for a piece of toast, instead we prepare my Love Loaf which has become more satisfying than any processed loaf on the market shelf. I believe the key to change is allowing yourself the freedom to explore within the confines of your circumstances. Although kitchen experiments might be frustrating at times, they can be equally rewarding when you obtain success.
