This week I’ve made a vow to watch my portions. Yep, I’ve gotten a little lazy and dipped my spoon one too many times lately. One of my favorite tips for reducing portions is to use smaller bowls, plates and spoons. You’ll be amazed at how satisfying a dessert can be when consumed with tiny utensils. Part of my new year plan is to create low-sugar, nutrient dense simple desserts using my muffin pan. I love the ability to control how much goes into each space and the option to individually wrap each small dessert. This helps remove the temptation to over-consume. My Creamy Lemon Pie Bites combine the creaminess of coconut with the freshness of lemon – all poured over a soaked nut and date crust. So delicious and satisfying!
I love eating desserts with lemon this time of year. Lemons just have a way of refreshing the palate, thereby helping to reset the brain and desire for overeating. We often need something to help get us over the crazy overindulgence hump, and that “something” is simple lemons for me.
So here we Creamy Lemon Pie Bites…#PoweredbyPlants
- 1 cup soaked nuts of choice (I used walnuts and pecans)
- 4-5 dates, pitted
- pinch of Himalayan sea salt
- 3/4 cup raw cashews, soaked overnight
- Meat of 1 young Thai coconut
- 3/4 cup fresh lemon juice
- zest of 1 whole lemon
- 1/3 cup real maple syrup
- pinch of Himalayan sea salt
- Soak nuts for crust overnight.
- Soak cashews for filling overnight.
- Drain nuts being used for crust and pat dry.
- Line muffin tin with paper liners. (I use If You Care, Unbleached Baking Cups)
- Using a food processor or Vitamix, add 1 cup soaked nuts, pitted dates and sea salt. Pulse until crumble forms.
- Place 1 Tablespoon crust mixture into each muffin cup.
- Using a Vitamix, food processor or high-speed blender, add all filling ingredients. Blend until creamy. Stop to scrape down the sides as needed.
- Pour creamy mixture evenly over crust in each muffin cup.
- Top with a little fresh zest.
- Place in freezer to set. Typically takes about 2 hours.
