Cauliflower Millet Mash

Given November is all about boosting immunity and nutrition while enjoying the flavors of the season, we thought it was fitting to begin sharing a few of our favorite nutrient-dense side dishes for your Thanksgiving meal.  Our Cauliflower Millet Mash is not only delicious but provides a boost of magnesium with the addition of sprouted millet – perfect for helping to calm holiday stress.

Benefits of Millet:

  • Gluten Free
  • Rich in Magnesium – beneficial for muscle and nerve function.
  •  Easily digested
  • Drought resistant gluten-free grain – easy to grow in poor soil conditions. (Good for the environment)

Benefits of Orange Cauliflower:

    • Contains higher amounts of vitamin A than the normal white variety.
    • Rich in folate, calcium, potassium, and selenium, vitamin C and fiber.

Ingredients
  1. 1 cup millet
  2. 5 cups water or (low-sodium) vegetable broth
  3. 3 cups orange cauliflower florets
  4. 1 teaspoon sea salt
  5. Cracked pepper to taste
  6. 2 Tablespoon extra virgin olive oil
  7. 1/2 yellow onion
  8. 2 cloves garlic, minced
  9. 1 tablespoon freshly chopped herbs (I used rosemary & thyme)
  10. 1 tablespoon nutritional yeast flakes
  11. Optional: butter, roasted garlic, wasabi, horseradish and/or sour cream to taste
Instructions
  1. Soak millet overnight with a splash of rice vinegar. (If sprouting your millet, see notes in post)
  2. Wash and drain millet. Place in a large saucepan with water (or vegetable broth, cauliflower, and a pinch or sea salt).
  3. Bring to a boil and reduce heat to a simmer. Cover with tight-fitting lid for 35 minutes. Give a good stir half-way through cooking time. Mixture will appear thick and creamy when finished.
  4. Heat a skillet over medium-high heat with one tablespoon olive oil. Add chopped onion and a pinch of sea salt. Sauté 3-4 minutes. Add minced garlic and fresh chopped herbs, give a good stir and continue cooking 1-2 minutes. Remove from heat.
  5. Using a food processor, add cooked millet and cauliflower, sautéed onion & garlic, 1/2 teaspoon high-quality sea salt, fresh cracked pepper, and nutritional yeast flakes. Purée the mixture until smooth. Note: I like mine a little on the rustic side - no pressure to make your mash too creamy.
  6. Serve warm with chopped scallion. For those that love butter, try Soy-Free Earth Balance Spread as an option.
  7. ENJOY!
