As the heat begins to rise this summer and the need to keep our kitchens cool becomes more of a problem, I love creating cold soups utilizing high-water-content vegetables of the season. Cold soup is such a nutritious way to pack in the veggies and uses no heat to prepare. Simply throw everything into your Vitamix and blend away. Now that’s an easy dinner! Our Creamy Vegan Cucumber Soup is made with a base of beautiful English cucumbers, fresh herbs, jalapeño, cilantro, and soaked cashews.
High Water Content Vegetables Include:
Carrots, Cucumbers, Celery, Green Peas, Lettuce, Peppers, Tomatoes, Zucchini
Creamy Vegan Cucumber Soup

Ingredients
- 1 cup soaked cashews - at least 2 hours
- 3 English cucumbers, peeled and chopped
- 1 - 1 1/2 cups water
- 1 small shallot, chopped
- 2 scallions, chopped - both white and green parts
- 2 med.cloves garlic
- 1/4 - 1/2 small jalapeño, seeds removed
- Juice of 1 lemon
- small handful cilantro leaves, about 2-3 tablespoons (feel free to sub basil)
- 1 tablespoon white miso
- 1 tablespoon coconut aminos (or sub 1/2-1 teaspoon high-quality sea salt)
- 1/2 teaspoon dried oregano
- Fresh cracked pepper to taste
- Topping suggestions: Fresh organic corn salsa or micro greens (as shown in this post)
Instructions
- Soak 1 cup cashews in water, at least 2 hours to soften
- Prep veggies.
- Place cucumbers, scallions, shallot, garlic, and jalapeño into your Vitamix. Add 1 cup water and blend until smooth.
- Add white miso, lemon juice and coconut aminos. Blend until incorporated.
- Add cilantro, dried oregano and pepper. Give a quick whirl. Adjust seasoning if needed.
- Chill in refrigerator until ready to serve. Top with micro greens (as shown) or homemade organic corn salsa.
