Although I haven’t posted one of my smoothie concoctions in a while, that certainly doesn’t mean smoothies have lost their place at the Kelly table. In fact, we typically make at least one smoothie per day with an endless stream of creative combinations coming from my peanut gallery. Feeling the need for green, my Popeye Mint Madness Smoothie is really more of a raw parfait than a smoothie. This amazing creation starts with my homemade raw cacao and chia pudding, a layer of rich chia power deserving of Popeye himself.
Layers upon layers…
Bottom Layer: The bottom layer kicks off our love for Popeye with a rich, dark and raw pudding made with any nut or seed milk of your choice, chia seeds, vanilla and 1-2 dates. That’s it! So simple!
Middle Layer: A simple addditon with litlle effort, all you need to do is open a box. Emmy’s Organics has created a gluten-free, (vegan and raw), sprouted Super Cereal that I love to use in place of granola. Only 1/3 cup provides 6 grams of amazing plant protein.
Topping it off: The top layer consists of my Popeye Mint Madness Smoothie. This beautiful green smoothie starts with your favorite nut or seed milk. I’ve combined maple water from Drink Happy Tree with 1/4 cup of soaked cashews and a splash of vanilla. No straining necessary! After making my base, I added the following:
- 1 cup of frozen, organic spinach (fresh is fine as well),
- 1 tablespoon raw cacao nibs
- 1 frozen banana
- 6 frozen maple water ice cubes
- 10 fresh mint leaves
