Smoothies are a big part of my weekly eating plan. I absolutely love throwing organic fruits and veggies into my Vitamix and giving it whirl. Plant-based creations are made in minutes and contain the nutrients needed to power through my day. Clean up isn’t bad either! Today I’m sharing my recipe for Blueberry Lemon Thyme Smoothies. They’re so delicious and include fresh sprigs of lemon thyme from my garden. I’m not sure about you, but any time I can include fresh herbs into a recipe, I’m happy camper.
Typically a smoothie is not created in my house without some sort of superfood addition. Keeping with the “purple” theme, I decided to boost these little smoothies with organic dried maqui powder from Organic Meets Good. Maqui berries grow wild throughout parts of Chile and contain an abundance of anti-aging anthocyanin due to their deep purple pigment. In addition to maqui’s powerful antioxidant and anti-inflammatory benefits, these little berries are also high in vitamin C, calcium iron and potassium.
Is the thyme growing in my patio garden pot beneficial for health?
YES! Those sprigs of thyme used to flavor your favorite soups are both beneficial and tasty. Thyme is not only rich in nutrients and an excellent source of iron, but also contains anti-fungal and antibacterial properties. Fresh thyme is often used as a home remedy for respiratory issues and sore throats. The volatile oils in thyme have been found to protect cell membranes.
Tip: Using a couple of drops of Essential Thyme Oil in a little water has great benefit for those suffering from sore throats.
- 1.5 cups almond milk (feel free to sub coconut water or any other non-dairy milk)
- 1 frozen banana
- 1 Sambazon Acai Pack
- 1.5 cups frozen organic blueberries
- 2 teaspoons organic maqui powder
- 1 tablespoon raw almond butter
- 3 sprigs of thyme (leaves only)
- Throw everything into your Vitamix and give it a whirl.
