Much of my life as a teenager was spent as a cookie kind of girl, you know the type, a little pudgy around the middle and desperately seeking sugar! Thank goodness those days are behind me. After almost 30 years of eating mostly plants, my desire for sugary treats is not nearly as strong as it was when I was a kid. Now, that doesn’t meant I’m not in love with a good cookie, the only difference is the cookies I bake today are far different in terms of health benefits than the cookies of my past. Today I’ve combined two of my favorite products (Nuttzo Power Fuel Nut Butter and Sunwarrior Natural Warrior Blend vegan protein powder) to create my Nuttzo Warrior Cookie Bites.
With only 6 simple ingredients and prepped in under 5 minutes. These bites have quickly become a “go-to” cookie for my family!

- 1 1/2 cups gluten-free oats, measured and then buzzed in a coffee grind to make a rustic flour.
- 1/3 cup Nuttzo Smooth Power Fuel nut butter
- 1/4 cup pure maple syrup
- 1/4 teaspoon fine sea salt
- 2 teaspoons vanilla
- 1 scoop Sunwarrior Natural Vegan Protein Powder
- Preheat oven to 350 degrees F.
- Buzz oats in coffee grinder and place in a medium size bowl.
- Add salt and Sunwarrior vegan protein. Whisk until well combined.
- In a small bowl, combine maple syrup, vanilla and Nuttzo. Stir until well combined.
- Add wet (nut butter/maple syrup combo) to the dry ingredients. Stir until well combined. This is a bit sticky and I did use my hands.
- Form mixture into a log and place on parchment paper. Flatten on all four sides with a spatula and slice with a sharp knife into 1/4" thick cookies. This step is optional.
- Place cookies on baking sheet. Bake 12-15 minutes or until lightly brown.
