Today marks the beginning of lent, a time for reflection and renewal. As we begin our 40 days of simple living and fasting, a few of us in the Kelly house have decided to give up sugar as a way to reset our bodies, minds and spirit. We’re looking forward to sharing healing, “sugar-free” recipes and hope you’ll join us on the journey. Today’s recipe is all about reducing sugar cravings during this first week of detox. Kinpira is a traditional Japanese dish made with fresh burdock root, carrots, onion, ginger and sesame seeds. The earthiness of the burdock root balances nicely with the natural sweetness of the carrots and onion, helping reduce cravings when nibbled on throughout the day.
Benefits of Kinpira and Burdock Root:
Burdock root is a well-known herbal remedy for supporting the liver and detoxification process.
- Supports clear skin – especially helpful for those suffering from acne.
- Known as a blood cleanser and supportive for the lymph system.
Dr. Weil’s take on burdock root:
- 2 cups fresh burdock root, scrubbed clean or peeled, cut into matchsticks
- 2 large carrots, cut into matchsticks
- 1 small yellow onion, thinly sliced
- 2 teaspoons coconut oil or sesame oil
- 1 tablespoons coconut aminos or tamari
- 1 " piece fresh ginger, finely grated
- 1 tablespoon water
- 2 tablespoons black or white sesame seeds, lightly toasted
- Prep burdock root, carrots, onion and ginger.
- Heat a large iron skillet over medium heat. Add oil, burdock root, onion and carrots. Sauté 3-4 minutes.
- Reduce heat to simmer. Add 1 tablespoon water and fresh ginger. Give a good stir. Cover with a lid and continue to cook 10-15 minutes, stirring frequently. Add more water if needed during the process.
- Sprinkle with lightly toasted sesame seeds.
