Okay kids…not sure what to feed your non-vegan friends? Well, if you’re aiming to please, my Coconut Bacon does the trick. Coconut bacon bits have a smoky-sweet flavor with a nice crunch. They work well in BLT sandwiches or topped on just about anything you can imagine. I’ve been known to eat them straight out of the jar…YIKES! Yep, they’re that good. Throw them on top of your next salad, bowl of soup, or favorite “vegan” mac and cheese. I’m not sure you can go wrong with these babies! What you’ll need to make vegan Coconut Bacon:
Top a baked sweet potato with our avocado & cashew cream, pistachio nuts, coconut bacon and chives. DELICIOUS!
Coconut Bacon

Ingredients
- 1 - 7 oz. bag Unsweetened Coconut Flakes (Let's Do Organic)
- 3 tablespoons coconut amino (Coconut Secret)
- 1 tablespoon liquid smoke (Found mine at Whole Foods)
- 2 teaspoons organic maple syrup (Coombs grade B)
- 1/2 teaspoon organic smoked paprika (Spicely Organic)
- 1 pinch Himalayan sea salt
Instructions
- Preheat oven to 325 degrees F.
- Using a small bowl, combine coconut aminos, liquid smoke, maple syrup, smoked paprika and salt.
- Place coconut flakes in a large bowl. Pour combined liquid over your flkes and give a good stir until well coated.
- Give a stir and pour over your coconut flakes.
- Lay coconut flakes out on 2 baking sheets.
- Place in oven on the middle rack and bake 22-25 minutes. Mine took the full 25 because my oven was not preheated. Watch closely.
- Stir your coconut bacon every 5 minutes during the cooking time. This keeps the bacon from sticking together and prevents burning.
