Fruit cake is often a tradition in many households at Christmastime but today I’m taking that age-old custom and giving it a healthy Goofy Foot twist. My Holiday Fruit Cake Smoothie keeps with the tradition of using dried fruits, nuts and spices without the heaviness of a boozy cake. This recipe can be adapted to your liking by switching out the type of nut milk, dried fruits and spices to something more suitable to your taste. Adding rum is not off the list of possibilities either, but I would recommend using an organic rum from a company like Greenbar Crafts who makes a Crusoe Organic Rum.
Here’s to keeping the holidays light and fun this season! Enjoy your family, friends and people on the street. Eat well and remember to take a breathe.
- 1/2 cup homemade almond milk (or nut milk of your choice)
- 2 tablespoons fresh squeezed orange juice
- 1/2 packet Cheribundi Tart Cherry Smoothie Pack
- 1 1/2 frozen bananas
- 1 date, pitted
- 2 small dried Calimyrna Figs
- 1 dried Turkish apricot
- 1 teaspoon Lucuma Powder
- Pinch of freshly ground nutmeg
- 1/2 cup homemade almond milk (or nut milk of your choice)
- 1 tablespoon dried cranberries
- 1 tablespoon raw cacao nibs
- 1 heaping teaspoon maca powder
- 2 dried Calimyrna Figs
- 1/8 teaspoon Ceylon cinnamon
- Add all bottom layer ingredients into a high-speed blender and blend until creamy. Pour into chilled glass and place in freezer.
- Optional: For a pretty presentation, line the inside of the glass with orange slices (thinly sliced) or figs. I find the figs stick to the inside of the glass nicely and are easier to use, but the orange slices also look very pretty.
- Add all top layer ingredients into a high-speed blender and blend until creamy. Remove chilled glass containing bottom layer smoothie and pour top layer until filled. Garnish with your favorite nuts and fruit.
- ENJOY!
