Out and About: La Jolla & Trilogy Cafe

November 28, 2014 By Kris Kelly

We’re out-and-about this holiday season searching for healthy, vegan, non-gmo, organic and gluten-free menu items around San Diego.  Now, I know that’s a tall order but this is the way we roll in the world.  We have collectively (at one time or another) suffered from autoimmune disease, Crohn’s disease, pre-diabetes, esophageal issues (complete removal of the esophagus for one of us) and hormonal fluctuations causing cysts, tumors and other nasty shit!  Today, I’m happy to say we’ve taken charge of our health!  No longer will we, or should we stand for eating crap!  We’re here to help you seek and find menu items made with whole foods fit for any BODY.  Today’s visit brought us to Trilogy Cafe in La Jolla.  I was told about Trilogy Cafe from one of our Instagram friends @Veganalamode (Thanks Karissa).

Trilogy Cafe

First impression:

We were taken back by the small elevator leading to the roof top cafe and weren’t sure what to expect.  (Note: Both Faith and I suffer from claustrophobia – haha!)   As soon as the doors opened, we knew we had hit the jackpot!  What an amazing and beautiful rooftop location in sunny La Jolla.  Trilogy Sanctuary is much more than a cafe, evident by the aerial yoga structure adorning the middle of the rooftop. There was no aerial yoga going on while we were visiting, but it did look inviting and made us want to come back to embrace this unique style of yoga.

Trilogy Sanctuary“Aerial Yoga is a form of Yoga that uses hammocks to deepen stretches and take your Yoga to entirely new heights. This playful style is able to release tension in the body, especially the spine. Creating decompression in the joints.” – Trilogy Sanctuary.

As we entered the cafe, we realized this was not your typical juice bar and restaurant. It’s typically difficult to find even one menu item that fits our criteria in the restaurants we visit, however, Trilogy Cafe has broken that mold.  Not only do they provide a completely vegan menu but are also committed to providing 100% organic, gluten-free and soy- free creations.  As Faith and I began to look over the menu choices hanging on the wall, Scott Steele, Trilogy’s chef and manager, greeted us with a smile and recommendations. Thanks so much Scott! What a nice, friendly guy and extremely talented with his idea of healing food!

Faith and I ended up choosing a few different items from the menu, although I will definitely be going back to try much more!

What did we order?

Trilogy Cafe

Sparkle Super Smoothie

The Sparkle Super Smoothie $8 / Benefits:  energy, detox, anti-aging, weight loss / Made with matcha green tea, spinach, lime, banana and mango.

We also decided to try something from their Nibble, Taste & Share menu – ending up with the Dips and Nibbles platter $7 / Included a choice of either Veggie chips with two house made dips or raw veggie sticks with a choice of two house made dips. Note:  We got the chips!  Our dips included the Spicy Chipotle Love Sauce and a Sun dried Tomato Dip (unfortunately, I don’t remember the name of that one folks)…you’ll have to ask about it when you visit.

Of course, no menu sampling can be complete without dessert!  Faith and I decided on the Transcendent brownie $7 / A rich, moist and chocolatey brownie with fine nutty chunks.  Served warm (and it was perfectly warm) with a mound of creamy vegan vanilla ice cream and salted caramel sauce!  Okay, nothing more needs to be said…just look at he picture! YUM!

After our menu sampling, Scott introduced us to one of the lovely owners of this amazing space, Joe Caldera.  What a sweet guy, filled with positive energy and excitement for what Trilogy Sanctuary offers. Find out more about Joe here! Unfortunately, Leila Dora, Joe’s partner and co-owner of Trilogy was out of town, however, we’re hoping to connect with her on our next visit.

The big take-away:

This is a must-try cafe for anyone wanting to increase their personal health and well-being.  The food is amazing and the atmosphere casual and inviting.

More about Trilogy Sanctuary:

“Trilogy Sanctuary is owned by Joe Caldera and Leila Dora. Joe has been in the holistic industry for over ten years, with his own counseling and spiritual coaching business. Leila has been a Yoga teacher for 4 years and is a qualified nutritional counsellor. She is passionate about good, wholesome living. They met in 2010 and have enjoyed their life together in San Diego ever since. Trilogy was born from their desire and passion to share their knowledge and help to spread health, joy, good food, positive spiritual practices and good exercise to the world. They believe very strongly that to find true healing one must address the physical, emotional and spiritual aspects of our being. Only with balance of the three can we find true healing in our lives. The body and mind are strongly connected. Trilogy is a place that encourages balance and healing through mind, body and spirit.”   -Trilogy Sanctuary
