Salsa Verde

Today we’re sharing this simple recipe for Salsa Verde using only six easy-to-find ingredients. Tomatillos are the base for this tasty salsa and are a bit unusual if you’ve never used them before.  A member of the nightshade family (along side eggplant, tomatoes, and potatoes), tomatillos resemble a green tomato with a thin outer husk.  They have a distinct flavor and are often used in Mexican cuisine.

Benefits of tomatillos used in our Salsa Verde:

  • Very low in calories, only 10-12 calories per medium tomatillo.
  • Good source of dietary fiber and minerals (potassium, manganese, iron, magnesium, phosphorus, and copper).
  • According to Dr. Mercola: “A recently-discovered set of naturally occurring phytochemical compounds called withanolides, such as Ixocarpalactone-A, is one of the compounds in tomatillo found to be not only antibacterial, but also a natural cancer fighter. Traditional healers in India have been known to prescribe foods containing these compounds as a tonic for arthritis and other musculoskeletal conditions, even if they didn’t know why it worked.”

Ingredients
  1. 5-6 tomatillos, husks removed and rinsed
  2. 1 jalapeño, seeds removed (add another 1/2 or 1 whole jalapeño if you like your salsa SPICY)
  3. 1 clove garlic, pressed
  4. 1/4 yellow onion, finely diced
  5. Juice of 1/2 lime
  6. 1/4 teaspoon fine sea salt
  7. 1/4 cup water
  8. 1/4 yellow onion
Instructions
  1. Roast tomatillos and jalapeño on a baking sheet under the broiler for about 5-10 minutes. Watch closely. I'm not a fan of burned food and typically turn my tomatillos over half-way through the roasting time making sure they don't get charred.
  2. Place roasted tomatillos, jalapeño, garlic, lime juice, water and sea salt into your Vitamix. Give a good whirl.
  3. Finely chop the onion and add to salsa. Stir.
  4. Serve with chips, tacos or enchiladas.
  5. ENJOY!
