Raw Maqui Berry Bites

Who doesn’t love a good dessert, especially when it’s raw and full of superfood power.  Today I’m sharing my Raw Maqui Berry Bites made without the use of cashews, yep, no cashews!  Most raw tarts, pies, and cheesecakes start with a base of soaked cashews; however, we seem to be over them around the Kelly house.  What’s a girl to do…mix-it-up and create something sweet and creamy without them. My little bites need to be frozen and thawed slightly before serving. So, here you go folks…my idea of dessert.

Maqui berries grow wild throughout parts of Chile and contain an abundance of anti-aging anthocyanin due to their deep purple pigment.  In addition to maqui’s powerful antioxidant and anti-inflammatory benefits, these little berries are also high in vitamin C, calcium, iron, and potassium.

Base
  1. 1 cup pecans
  2. 1 cup soaked walnuts
  3. 5 Medjool dates, pitted
  4. 1/2 teaspoon raw vanilla powder (or 1 teaspoon vanilla)
  5. pinch of sea salt
Filling
  1. Meat of 1-2 young Thai coconuts - About 1 cup meat (ask the produce folks to crack them open for you, but remember to bring a jar for the water)
  2. 1 cup full-fat coconut milk
  3. 1/2 cup coconut oil
  4. 2 teaspoons vanilla
  5. 3 teaspoons maqui powder
  6. 1/4 cup coconut nectar
Base
  1. Place nuts, dates, vanilla and sea salt in a food processor. Pulse until nuts are broken down and mixture forms a ball. Do not over process as the nuts will turn into nut butter.
Filling
  1. Scoop out the flesh of your coconut being mindful to remove all woody parts. Rinse the coconut flesh well making sure all pieces are removed.
  2. Add coconut flesh and all other ingredients to the Vitamix and blend until creamy.
  3. Line the bottom of a loaf pan with parchment paper. Place nut mixture in the bottom and press to flatten. I like using a spatula as it helps give me an even layer.
  4. Add filling to the top and smooth out.
  5. Place pan in freezer for about 2-4 hours.
  6. Drizzle with homemade raw cacao sauce, thaw slightly and serve.
  7. ENJOY!
