It’s been a HOT September in San Diego and keeping cool is not always easy. Enjoying a cold smoothie is the perfect way to help lower your internal body temperature and cool down quickly. Our smoothie creations take many forms depending upon the weather and the day, but today called for something a little special, our Mango Pitaya Smoothie Jar. This gorgeous jar started with a simple mango and chia pudding and then topped off with a mango, pitaya, and baobab smoothie. DELICIOUS! I love using Pitaya Plus frozen dragon fruit packets, found at Jimbo’s Naturally.
What’s the deal with Pitaya?

Pitaya (aka Dragon Fruit) is an unusual looking, vibrant-colored fruit from several species of cactus native to both Central and South America, and Mexico. Pitaya is considered a superfruit due to it’s high levels of vitamin C, dietary fiber, antioxidants and calcium.

Pitaya fruit contains many little seeds within its white or brightly colored flesh. These seeds are edible and provide both protein and healthy mono-unsaturated fats.
Mango Pitaya Smoothie Jar

Ingredients
- Base: Mango Chia Pudding
- 1 cup almond milk
- 1/2 fresh mango, peeled
- 3 tablespoons chia seeds
- 1 tablespoon maple syrup
- 1 teaspoon vanilla
Smoothie
- 1 cup almond milk
- 1 package frozen Pitaya Plus
- 1 teaspoon baobab powder
- 1 frozen banana
- 1 cup frozen mango
- 1/2 teaspoon Ceylon cinnamon
- Optional: 1 date for added sweetness
Instructions
- Base: Chia Pudding
- Add almond milk, fresh mango, maple syrup, and vanilla to a high-speed blender. Run until mango and almond milk become creamy. Add chia seeds and pulse a few times. Pour into a clean jar and refrigerate for 4 hours or overnight.
Smoothie
- Combine all ingredients in a high-speed blender. Blend until smooth.
- Place Chia Pudding in a glass and top with Mango Pitaya Smoothie.
- ENJOY!
