Bold Blackberry Salad

Salad
- 4-6 cups of your favorite organic spring mix.
- 1 cup fresh blackberries
- 1/2 cup fresh raspberries
- 1 peach, sliced into wedges
- 6 mint leaves, chopped
- 1/4 red onion, sliced thin
- 1/4 cup sweetened pecans
Dressing
- 1/2 cup blackberries
- Juice of 1 lime
- Zest of 1 lime
- 1 small shallot, minced
- 1 tablespoon maple syrup
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon camu camu powder
Salad
- Prep all ingredients and place in large salad bowl. Lightly toss.
Dressing
- Place all ingredients in a high speed blender. Run until creamy.
- Pour dressing over salad. Toss and ENJOY!
