Quinoa Green Pea and Mango Salad

There is nothing like the taste of green peas paired with mango in the spring or early summertime.  I know (I’m covering my ears)…you’re kids hate peas!  Here’s what I say to my kids…”Let’s Give Peas a Chance!” Our Quinoa Green Pea and Mango Salad combines the benefits of protein-rich quinoa and sweet mango with today’s shining star – PEAS. Yep, peas area a rich source of vitamins C and K, low in calories, and are actually a surprising source of fiber. No need to look high and low for fresh peas because frozen peas work just as well in this recipe.  Look for USDA Certified Organic peas in the freezer section of your favorite local market.  

Sweet Pea Mango Quinoa Salad
What’s the deal with quinoa (keen-wah)?
  • Quinoa is actually a gluten-free pseudo-cereal, not a grain.
  • High in magnesium and contains all nine essential amino acids
  • A great replacement for your morning oatmeal.  It adds an especially nutty flavor to any warm porridge.
  • The perfect addition to any salad.  It’s mild, nutty flavor works well with any greens of your choice.
  • An amazing base for your favorite veggie burgers.
  • Replaces rice in any of your favorite dishes.

Salad
  1. 2 cups cooked quinoa, prepared according to package directions.
  2. 1 mango, small dice
  3. 1/4-1/2 red onion, finely diced
  4. 1-2 scallions, finely diced
  5. Zest of 1 lemon
  6. 2 cups organic frozen peas, thawed but not cooked (I run mine under cool water and drain)
  7. 1/4 cup fresh parsley, chopped
  8. sea salt and fresh cracked pepper to taste
Dressing
  1. 1 tablespoon flax oil (My favorite brand is Flora Oil)
  2. 1 tablespoon fresh squeezed lemon juice
  3. 1-2 tablespoons fresh squeezed orange juice (it might be nice to add the zest of 1/2 orange as well)
  4. 1 tablespoon chia seeds
  5. 1 teaspoon ume vinegar
  6. 1-2 tablespoons
  7. Pinch of quality sea salt
Instructions
  1. Prepare quinoa according to package directions. Let cool completely.
  2. In a large bowl, combine cooked quinoa and all other salad ingredients. Toss to combine.
  3. In a small bowl, whisk all dressing ingredients until well combined.
  4. Pour dressing over salad and toss lightly.
  5. ENJOY!
