Vegan Cold Brew Coffee Ice Cream

I love when my friends and family share products with me they have found through their travels.  My son’s sweet girlfriend Kelsey brought me a bottle of Secret Squirrel Cold Brew Coffee to try this weekend.  I’m not much of a coffee drinker but absolutely love coffee ice cream – go figure.   Anyway, we decided to create something special with this beautifully packaged cold brew coffee.

Cold Brew Coffee Ice Cream

Ingredients
  1. Meat of 3 young Thai coconuts (make sure all hard pieces are removed)
  2. 1 can coconut milk
  3. 2-3 tablespoons coconut nectar
  4. Seeds from 1 vanilla bean pod
  5. Pinch of high-quality sea salt
  6. 6-8 Tablespoons Secret Squirrel Cold Brew Coffee (or more if you like a stronger coffee taste)
Instructions
  1. Place all ingredients in high-speed blender and give it a whirl until creamy.
  2. Place creamy mixture in ice cream maker (follow directions for your specific ice cream maker)
  3. Serve immediately as a soft-serve treat or place in freezer for later use.
  4. ENJOY!
