I love when my friends and family share products with me they have found through their travels. My son’s sweet girlfriend Kelsey brought me a bottle of Secret Squirrel Cold Brew Coffee to try this weekend. I’m not much of a coffee drinker but absolutely love coffee ice cream – go figure. Anyway, we decided to create something special with this beautifully packaged cold brew coffee.
Our Vegan Cold Brew Coffee Ice Cream combines the creaminess of coconut with the strong flavor of coffee for an incredible dessert your guests will love.
Cold Brew Coffee Ice Cream

Ingredients
- Meat of 3 young Thai coconuts (make sure all hard pieces are removed)
- 1 can coconut milk
- 2-3 tablespoons coconut nectar
- Seeds from 1 vanilla bean pod
- Pinch of high-quality sea salt
- 6-8 Tablespoons Secret Squirrel Cold Brew Coffee (or more if you like a stronger coffee taste)
Instructions
- Place all ingredients in high-speed blender and give it a whirl until creamy.
- Place creamy mixture in ice cream maker (follow directions for your specific ice cream maker)
- Serve immediately as a soft-serve treat or place in freezer for later use.
