Morning Quinoa Porridge

I’m often asked how I get my protein…one answer I always give is QUINOA.  Yep, quinoa contains all nine essential amino acids, a complete protein source for those of us working on getting more plants into our diet.  What better way to start your morning than with a high-protein, gluten-free, and magnesium rich food. 

Morning Quinoa Porridge

Ingredients
  1. 2 cups leftover quinoa
  2. 1 cup almond milk
  3. pinch of sea salt
  4. 1 teaspoon Ceylon cinnamon
  5. 2 teaspoons coconut oil
Topping
  1. Fresh fruit and nuts of choice
Instructions
  1. Using a medium size saucepan, add leftover quinoa, almond milk, sea salt and cinnamon. Give a good stir. Bring to a boil, reduce heat and simmer about 5 minutes, or until warm. Top with your favorite fruit and nuts. We've used our maple toasted pecans and fresh blueberries in this dish, but any fruit / nut combination will do.
  2. ENJOY!
