Who doesn’t love a light quinoa salad? Our Mango and Goji Quinoa Salad may be a light meal, but we’ve amped up the nutrition by adding mango and goji berries. Goji berries have been used in Chinese medicine for thousands of years, and just happen to be one of my favorite superfoods.
“In China, goji berries are eaten raw or dried, juiced, in wines, or cooked into herbal teas. The oblong reddish-orange fruits possess a light sweetness, and when dried, they are the size of raisins. According to traditional use, goji berries are useful for enhancing the health of the liver, kidneys and lungs. Mango and Goji Quinoa Salad

A light and delicious superfood meal, made with mango, goji berries and quinoa.
Salad
- 2 cups cooked quinoa (prepared according to package directions)
- 1/2 red onion, finely diced
- 2 scallions, chopped
- 1/4 cup cilantro leaves, chopped
- 2 tablespoons goji berries
- 1/2 avocado, cubed
- 1 mango, diced
- Large pinch of fine sea salt
- Freshly ground pepper to taste (optional)
Dressing
- 3/4 bunch fresh cilantro, thick stems removed
- 2 tablespoons fresh lime juice
- 1 teaspoon coconut vinegar
- 1 teaspoon coconut aminos
- 1 clove minced garlic
- 1 teaspoon Lucuma powder
Instructions
- Prepare quinoa according to package directions. Let cool.
- In a medium bowl, combine cooled quinoa, mango, onion, scallions, cilantro, and goji berries.
- Toss lightly until combined.
- Season with salt and pepper.
- Toss all ingredients for dressing into a blender. Blend on high speed until creamy.
- Pour dressing over salad and toss until well coated.
- ENJOY!
