We love oatmeal on a cold morning, but decided to give this “tried and true” breakfast staple an update. Adding quinoa to your morning bowl of oatmeal gives it a light and nutty taste. Quinoa is rich in magnesium and high in protein, containing all nine essential amino acids. Our Quinoa and Apple Porridge is the perfect way to start your day.
Quinoa and Apple Breakfast Porridge

Ingredients
- 1 cup extra thick, gluten-free oats
- 1/2 cup quinoa, rinsed and drained through fine mesh seive
- 1 Fuji apple, grated
- 3-1/2 cups water
- 1-2 teaspoons ground Ceylon cinnamon
- 1/4 cup almond milk
- 2 tablespoons real maple syrup
- 1/4 cup soaked walnuts (soaked overnight and rinsed well)
Instructions
- Place oats, rinsed and drained quinoa, grated apple and water in a pot with 1/8 teaspoon salt. Bring to a boil, reduce heat to low.
- Cook 15-20 minutes, stir half-way through cooking time. Add more water if needed.
- Add 1-2 teaspoons cinnamon to the pot and give a good stir.
- Serve warm, topped with almond milk and walnuts.
