In this edition of Vegans in the Hood, Megan and I visited Living Tea Brewing Co in Oceanside, CA to find out more about this popular drink.
Everything old is new again, and this slightly sour, fermented drink is no exception. We’ve questioned our friends, family and total strangers about why they choose to drink this fizzy concoction, and most feel it’s good for them but have no idea why. Those that are “in-the-know” believe kombucha can cure just about any ailment from autoimmune disease to cancer. Well folks…from what I’ve learned, they might not be that far off. Known as the Tea of Immortality by the Ancient Chinese, kombucha has been around for over 2,000 years. This “miracle tea” is actually a mixed culture of bacteria and yeasts grown in tea with added sugar.
- The yeasts in kombucha turn sugar into alcohol.
- the bacteria ferments the alcohol from the yeast, lowering the actual alcohol content and increasing the probiotic content.
Strengthening the gut is where it’s at in this new age of seeking health, and kombucha offers us another tool for the job of rebuilding our health.

Bill and Josh are no strangers to the hurdles many of us have experienced over the years with our own health issues. Both were “big” kids, raised in the midwest, playing football (linemen…YIKES), and raised on the standard American diet along side a generation eating genetically modified foods. After college both Bill & Josh were heavier than they wanted to be, sluggish, and knew something had to change. They were determined to figure out what nutrition truly means and find a healthier path that would work for them.
Bill’s Personal path to wellness:
“I had to make a lifestyle change and now am comfortable in my own skin.”
“We both did the vegan thing for a while, which helped us lose a lot of weight, but for me and my research, I felt like animal food has a place. I have definitely moved forward by not eating meat everyday and make sure the animals are ethically raised and fed actual food in their natural environment. I don’t eat a lot of meat, and mainly seek out good quality, pasture-raised chickens and eggs.”
Why are some people nervous to try kombucha?
“Kombucha is still a relatively new beverage to the mass consciousness. Many people are afraid of live foods which is ironic and really speaks volumes to the lack of knowledge about nutrition these days. Fermented foods are the oldest foods around. It’s funny that we live in a society now where we pasteurize our foods, killing the actual beneficial enzymes, all in the name of safety.”
“Kombucha seems weird to some people because it’s made with a living scoby, but what’s really strange is food companies making chemical extractions out of genetically modified corn plants, things like maltodextrin and high-fructose corn syrup, and then placing those extractions in their food products. That’s more weird than a live culture in a jar.”
