I’m often asked how I get my protein…one answer I always give is QUINOA. Yep, quinoa contains all nine essential amino acids, a complete protein source for those of us working on getting more plants into our diet. What better way to start your morning than with a high-protein, gluten-free, and magnesium rich food.
- 2 cups leftover quinoa
- 1 cup almond milk
- pinch of sea salt
- 1 teaspoon Ceylon cinnamon
- 2 teaspoons coconut oil
- Fresh fruit and nuts of choice
- Using a medium size saucepan, add leftover quinoa, almond milk, sea salt and cinnamon. Give a good stir. Bring to a boil, reduce heat and simmer about 5 minutes, or until warm. Top with your favorite fruit and nuts. We've used our maple toasted pecans and fresh blueberries in this dish, but any fruit / nut combination will do.
